This Healthier Pimento Cheese is it! I am all for a classic pimento cheese situation & this one fits the bill with healthier ingredients like raw cheese & coconut yogurt. Trust me, no one will know, though.
Healthier Pimento Cheese
Feeds: 6 - 8
Total time: 1 hour & 15 minutes
Ingredients:
3 c. cheddar cheese, shredded (I use Raw Farm)
2 c. Monterey Jack cheese, shredded
1 c. coconut yogurt or greek yogurt (I use Cocojune)
4 oz. jar diced pimentos
2 tbs. pickled jalapeños, diced
2 tbs. pickled jalapeño juice (from the jar)
1 garlic clove, minced
Dash of cayenne pepper
Dash of salt
Dash of pepper
Crackers or veggies, for serving
Extras:
Medium-sized bowl
Spatula
Garlic press
How to make:
Mix: Add all ingredients to a mixing bowl & combine with a spatula.
Chill: Place in fridge to chill for at least one hour.
Serve cold with crackers or veggies!
